Last Waltz
Herbal liqueurs are a murky world - there’s so many purported must haves, radioactive hues and mystery ingredients to wade through. We hold 4 at the bar. The first of which - Sweetdram Escubac - is a modern, versatile spirit that sits between a juniper-free Gin and delicate herbal. We exploit it for its’ flexibility, often adding a few drops of bitters to push it closer to a sub for something like Benedictine in a classic recipe.
The other three are bar perennials and veteran elevators of all manner of mixed drinks. Becherovka for cinnamon and all-spice, Strega for rich, peppery, saffron and the inimitable Green Chartreuse. Lovers of the latter (which should be everyone) love a Last Word. Gin, maraschino and lime lifted with a lick of pungent green goodness. Many a good night has rounded out with on of these. We’ve sought to riff on this all time fave with a summery spin, introducing The Last Waltz
Blended Irish Whiskey for the base, crème de banane (use a nice one, please!) for the maraschino, lemon in for lime and Green Chartreuse to tie it all together on the nose.
LAST WALTZ
Method: shake all ingredients with lots of ice until the tins are frosty (about 30 seconds or so) and double strain into a coupé/martini or other UPward glass

Ingredients:
1oz / 30ml Blended Irish Whiskey (we use Tullamore Dew Caribbean Rum Finish)
2/3oz / 20ml Crème de Banane
2/3oz / 20ml Green Chartreuse
2/3oz / 20ml Fresh lemon juice
~ Garnish with a spritz of freshly grated nutmeg
